1 egg white

1 Tbsp water

1 pound pecan halves

1 cup white sugar 

1 heaping tsp salt

1 heaping tsp cinnamon

Dash of cayenne optional

1.Preheat oven to 250 degrees. Put layer of aluminum foil on cookie sheet

2.In a mixing bowl, whip together the egg white and water – to hard peak stage, not soft. In a separate bowl, mix sugar, salt and cinnamon.

3.Add pecans to egg white mix and stir to coat nuts evenly. Remove and toss them in the sugar mixture until evenly coated. Spread the nuts on a prepared sheet, single layer.

4.Bake at 250 degrees for 1 hour. Stir every 15 minutes.
